blackberry lime popsicle recipeThis year, we are celebrating summer with the Happy Family Movement by creating a Summer Bucket List. This is the perfect summer for the kids and I to travel and see as many sites as we can. We leave Kansas in a little over two weeks, but cannot move into our new house until August. Can you say military family adventure? We are going to be spending time at my mom’s house at the beach, and breaking up the time by visiting friends and anything else that we are interested in. My husband will be going back and forth from DC to NJ on weekends, or we will meet him somewhere. We are so excited and cannot wait for the adventure that this summer promises.

Our list is probably more traveling and visiting things than we would normally pick any other summer. If we were staying home, we would definitely see the local sites, but it would include more crafts and simpler things. This summer we are taking advantage of not being able to move into our house. If you are looking for some other ideas, my friend Kristen has a great list, and this one is also full of fun ideas.

A few nights ago, we sat outside with the first homemade popsicles of the season and got to work on creating our list. We pulled out a road atlas and picked out the cities that we would pass through on our drive and places that we were interested in stopping. We each got to add to the list and each idea was on the table. It could be vetoed, but every idea was considered. Even creating the list is a fun family activity.

1/2 cup  plus 2 Tablespoons simple syrup (1/2 cup sugar and 1/4 cup water boiled and cooled)
1 cup fresh lime juice, strained
1 cup water
pinch kosher salt
1/2 pint blackberries

Blackberry and Lime Popsicles

Ingredients

  • 1/2 cup plus 2 Tablespoons simple syrup (1/2 cup sugar and 1/4 cup water boiled and cooled)
  • 1 cup fresh lime juice, strained
  • 1 cup water
  • pinch kosher salt
  • 1/2 pint blackberries

Instructions

  1. Combine the simple syrup, lime juice, water, and salt.
  2. Drop 4 blackberries into popsicle molds. Pour the lime mixture to the top.
  3. Freeze for at least 4 hours.

    Love your list! We just moved back to Northern NJ from Texas, but I too plan on spending lots of time at my mom and dad’s @ the beach and doing several of the same things. Best of luck on your adventure East. Just a recommendation before I forget…we lived in Baltimore and spent lots of time in DC, awesome pizza place located in both Georgetown and Dupont Circle called Pizzeria Paradiso. Very simple menu but delicious, great beers too :)

    When you make it to Annapolis for Crabs, give me a shout.! Would love to meet you and the kids and see Wes again (after 13+ years) We’ll be back in our home in Edgewater (next door to Annapolis) by the end of June. http://www.cantlers.com/ is our favorite”locals only” kind of place for seafood in the area.

    I made a list with the boys I nanny for today and we are now all so excited for summer! I think it will help our days fly by. We’ve designated each day of the week as something specific (Make Something Monday, Trip Tuesday, Wet Wednesday, Trip Thursday, Free Friday)

    We made your strawberry Popsicle again today and will have to put these into our rotation! Have a great summer :)

  12. Two months without being able to go “home” sounds like a gigantic adventure to me (if I understood correctly)! I like your style – everyone got to contribute ideas to the list.

    The popsicles look good and I love the berries in there! I haven’t had one in ages because they always gave me headaches. And not ice cream headaches… these would last for hours. Very strange. Maybe homemade ones would be better. :)

  15. You have inspired me to start a bucket list! This year we are taking our first family vacation with the twins so we are excited to get out and do many activites with them. I love that you have Old Town Alexandria on your list. We lived near there for a few years and I just love it. One of the only thing I miss about that area since I couldn’t stand the traffic. These popsicles look so refreshing! A great treat to kick off summer! :)
