Do you ever forget about recipes?  Ones that you love and make a few times and then the piece of paper that the recipe is written on gets shoved in the back of a drawer or something not to reemerge for years?  This is one of those recipes. Thankfully, I did end up finding it and made it as a starter for my annual orphan Christmas dinner.  We are a military family so we invite over whoever is still in town.  Some years there are 6 of us, some 20.  This year there were 8 adults and a handful of kids.  If you have children you know what Christmas Day can be like.  Crazy, tired children, too many mimosas at breakfast and a house strewn with wrapping paper.  Not really the best situation in which to have a sit down dinner for 8 with the good china and silver.  That being said, it is all together doable if you make things that can be prepared in advance.  Like this little baby.  The entire thing can be assembled and put in the fridge until you are ready to cook it.  I made it the day before, but it would probably hold for at least two.  In fact, it probably tastes even better when the flavors get a chance to mingle overnight.  Just put it in the oven about half an hour before your guests arrive and it will be ready and waiting to be dug into.  This was devoured in about 14 minutes.

7 bacon slices (I use thick-cut applewood smoked bacon.  Any bacon would work, but the bacon is the star of the show so I think that it should be really good bacon.)
2 garlic cloves, minced
2 packages cream cheese, softened
1/3 cup half and half
1/2 cup blue cheese crumbles
2 Tablespoons chopped fresh chives
1/3 cup toasted chopped walnuts

Cook the chopped bacon in a skillet until brown and crispy over medium high heat, about 10 minutes.

Drain the bacon on a paper towel lined plate.  Have you ever seen a more gorgeous picture?  Add the minced garlic to the pan and saute for 1 minute.

Beat the cream cheese with a mixer at medium speed until smooth.  Add the half and half and mix until well combined.

Stir in bacon, garlic, blue cheese, chives, and walnuts (reserve a few nuts and chives for the top).  Taste for seasoning.  I added a pinch of salt and a lot of pepper. Spoon the mixture into a small casserole dish or 4 (1-cup) ramekins.

Bake at 350 degrees until golden and bubbly.  Garnish with remaining walnuts and chives.  (I forgot too garnish with the chives, will you forgive me?  I was too focused on getting it my mouth.)  Serve with grapes, apple slices and crackers or toasted baguette would be nice too.

Make this and be prepared to share it with friends.  And if you are fast enough, you just may get a bite.

    With no parties on the horizon I decided to make this for dinner, along with some fresh bread, salad, fruit, etc.. Although ridiculously yummy, I would not recommend making a meal out of this. It was so good we kept eating more, and more, and more…. until we felt like we were slipping into a coma. Mmmmm… bacon blue cheese yummyness…
