Tortellini Salad with Artichokes, Tomatoes, and Olives

I love going to a restaurant and eating something that I love and recreating my own version at home.  This tortellini salad is something similar to what they serve at The Cheese Board in my hometown of Linwood, NJ.  I am not sure exactly how they make theirs, but this is pretty darn close. The very nice people at POM Wonderful sent me a case of delicious and healthy pomegranate juice to enjoy.  My children loved drinking it and I liked cooking with it.  Pomegranate juice is sweet and tart at the same time and I though that it would be perfect base for my salad dressing.  I was right.  I really love a simple mixed green salad for lunch or to start a meal.  I also think that a simple salad like this is a spring board for a dinner salad.  Add a protein, like a piece of grilled … [Read more...]
