Some weeks are easier than others to get dinner on the table. This week has not been one of those weeks. My husband working overnight, me having things to go to, crazy children, you know how it goes. But after eating out and skipping dinners and eating a snack instead, a home cooked dinner tastes that much better. This dinner took about 20 minutes from start to finish to make. I seasoned the flank steak and my husband threw it on the grill. I made the chimichurri and started a couscous mix from Trader Joe’s that is delicious. I steamed a vegetable and literally 20 minutes later, we were eating.
If you have 5 minutes, you can make this sauce. If you want to make a so-so dinner incredible, this is the sauce for you. It is fresh tasting and garlicky and tangy and so good. Flank steak is good on its own, but this sauce takes it to another level. I also love it on grilled chicken and it is amazing to dip bread into.
1 cup parsley
1/4 cup cilantro (I did not have any and it is great with or without it)
1/2 cup olive oil
1/3 cup red wine vinegar
2 garlic cloves
3/4 teaspoon red pepper flakes
1/2 teaspoon cumin
1/2 teaspoon salt
Put the herbs, garlic, and spices in a bowl or the blender.
Add in the olive oil and vinegar. Give it a whirl. You have chimichurri.
Drizzle it over something and dinner is ready.

Looks very tasty. I like red wine vinegar, but LOVE balsamic. Do you think I could substitute?
I love balsamic too. I think that it might overpower the herbs, but try it. Some of the best kitchen discoveries come from experimenting so give it a whirl.
