These little orange and white chocolate chip muffins are like little muffins of sunshine. When you bake with white chocolate chips, they almost get caramelized. I love how the flavor changes.
It is dark and stormy outside. Lots of thunder and lightning. It is the perfect day to stay inside in your jammies and watch movies. I am fairly incapable of concentrating on anything else because I am watching Season 2 of Downton Abbey on my iPad. I am so into this show, I love everything about it. Of course, the fact that it is British doesn’t hurt. The costumes are perfect, the characters strong, and I love the grandmother. The stuff that comes out of her mouth is nothing short of amazing. I am suddenly craving afternoon tea served on my china with a scone of some sort. Or maybe a muffin. Like an orange and white chocolate one.
I don’t know why I do not make muffins more often. They are so easy. You measure out a few ingredients, mix wet into dry, and 20 minutes later, you have a delectable muffin to eat for breakfast or snack. The secret to a good muffin is to not overwork the batter. Mix the batter until everything is just combined. It is okay to be lumpy, it guarantees a tender muffin. These little orange and white chocolate chip muffins are like little muffins of sunshine.
