I cannot believe that I have never posted these little gems until now. They are one of the most requested treats in my home and I make them all the time. These little muffins have all the flavor of pancakes, but none of the work. I love pancakes, but sometimes, standing over the stove watching everyone eat while I am still flipping pancakes can make me cranky. These are super quick to mix together and they are finished baking by the time the last bowl goes into the dishwasher.
These Pancake Muffins came from the adorable Bakerella. I have made very slight changes. We like our pancakes to have a little cinnamon and vanilla in them, so I included both in this recipe. I also make a glaze for them, but you could do as Bakerella does and dip them directly into maple syrup. Or eat them straight up. They are delicious any which way you eat them.
Speaking of maple syrup, I only use pure maple syrup. It is expensive, but the flavor and quality is far superior to the imitation syrups.
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons sugar
2/3 cup buttermilk
1 egg
2 Tablespoons pure maple syrup
2 Tablespoons melted butter
1 teaspoon vanilla
1/2 cup milk chocolate chips
Glaze:
1 cup powdered sugar
2 Tablespoons pure maple syrup
In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, salt, and sugar.
In another small bowl, whisk together the buttermilk, egg, maple syrup, butter, and vanilla. Pour the wet ingredients into the dry ingredients.
Mix the muffin batter until just combined. Add the chocolate chips. Fold together.
Line a 24 cup mini muffin tin with paper liners and put about a Tablespoon of muffin batter in each one. I add two extra chocolate chips to the tops of each one. I am fancy, didn’t you know?
Bake the pancake muffins in a preheated 350 degree oven for about 8 minutes.
While the muffins cool slightly, whisk together the powdered sugar and maple syrup. If it is too thick, add a little more syrup or water.
Dip the top of the muffin into the maple syrup glaze.
Try not to eat them all. It is gonna be hard. Real hard.

If you’re going to eat maple syrup you HAVE to go with the the pure stuff. It’s just not worth the calories otherwise!
I love pancakes but sometimes don’t feel like making them when I get up in the morning. With these I can eat them whenever the mood strikes…even if it’s the middle of the afternoon!

The consensus on homepodge is that these would also be delicious with wild blueberries, lemon glaze, and maybe some candied lemon zest sprinkled on top. Honestly, I think they would be delicious no matter what. It would be really hard to mess up pancake muffins!

Made the recipe today and bought it to a meeting. It was ok but they were more enamored with my blueberry muffins than these! Maybe next time I will add more sugar. Cute recipe though and not that bad

Actually I have to retract my last comment. The people at the meeting that ate these muffins liked them but all suggested I use smaller chocolate chips. I think this is still a cute recipe but I would add a little more sugar. Also, on a side note the syrup and confectioners sugar did not mix too well so I added about a tablespoon of milk and it made the glaze awesome. I cannot wait to make more recipes from this site and I am glad I came across it!!!
I wish that they made mini-milk chips! That would solve this problem.
I had this recipe marked for a few weeks and decided to make them last night. I think overall they’re worth making but, was a bit bummed on the glaze. I used real maple syrup and was really disappointed on the overall maple flavoring. I ended up dropping in some maple extract to give them a stronger flavor. If I made again, I would do the same in the muffin.

You can also dip them directly into the syrup. I just prefer the glaze because it hardens and doesn’t make the muffins soggy.
These are INCREDIBLE!! I used a handful of dark chocolate chips I had lying around, as I never have the milk ones (and made these on a whim LOL). I liked the maple glaze, but did add more syrup to make it the right consistency; the maple flavor was just luscious! I was thinking of all my favorite pancake varieties to make these with, and am so pumped.

Me again lol. I am making these again for a breakfast at my work and per your suggestion I did find mini milk chips at my local grocer yay!! I think this time for the glaze mix powdered sugar with 1-2 tbsp of orange juice…really give it the breakfast feel lol. Question? I compare my muffins to your picture and mine seem to be a little thicker. I follow the instructions as written…am I doing something wrong? Mine do not have that liquidy pancake consistency where you can pour pancake batter into the pan. Is it supposed to be thick? Thanks! Love your recipe ideas and this site!

These look super yummy! On a slightly off topic note about pancakes; Alton Brown suggests lining a baking sheet with a paper towel and preheating the oven to 200 degrees to keep your pancakes warm while you’re finishing cooking the pancakes. I’ve tried it and the pancakes stay fluffy and delicious without getting rubbery. It’s much more fun to make pancakes when you can actually eat them WITH the family.
I just made these – had a hankering for icing but maple syrup and pancakes at the same time. Recipe is nice and fluffy. I substituted 1/2 plain yogurt and 1/2 milk for the buttermilk, and raisins for the chocolate bits. The icing on this recipe works very well, but to break up the ‘brown on brown’ appearance, maybe instead just a plain white glaze but with a dollop of maple extract for flavoring. I added lemon zest to the icing and topped with sliced bananas and a drizzle of maple syrup. Teamed with a great breakfast sausage, it makes quite the Sunday morning treat. It could be my location, but I found I had to bake these for 12 min’s. I put the heat up to 355 when I saw how slow they were baking. For anyone not wanting to babysit making pancakes 2 at a time, or going with a leavened bun recipe, this recipe is great!

Saw these on pinterest and since pancakes are my son’s favorite, I’m giving these a try today. We don’t have the pure maple syrup so the Karo Pancake variety will have to do for now. I’d love to know if anyone else tried “fake” syrup and the results.
I am sure that they taste great, but I much prefer the taste and health benefits of real maple syrup.
These were wonderful. A quick and easy breakfast that didn’t require standing in front of a stove while everyone else is eating.
