How is it the middle of September already? I feel like I haven’t even gotten all of the sand out of my car yet and I am seeing pumpkins and mums at the grocery store. I’m mentally not quite there yet. I was walking around this weekend and noticed that some of the leaves are starting to turn. I think that whether I am ready or not, fall is coming.
Since the kids have been back in school, I have been cooking almost every day. I barely cooked at all over the summer. My kitchen was insufferably hot, and I would do just about anything to not have to turn the oven on. If I did cook, it was on the grill or a salad. I most definitely did not bake anything. I’ve baked a few times since it has cooled off and I have to be honest, I really missed it.
I like to bake something over the weekend to pack in lunches or to have for a snack during the week. These Peach Jam and Almond Oatmeal Bars are perfect for that. This recipe is made with pantry ingredients and can be changed a million different ways. In the summer, blueberry or cherry jam is great. In the fall, apple or pumpkin butter is a perfect filling. I love recipes like these that can adapted so easily based on what you have around. You can also switch out the almonds for pecans or walnuts, or leave them out all together. I am partial to apple butter and pecans myself.
