It’s the official start of beach season – Memorial Day weekend! I don’t think that New England got the message though, it’s cold and grey outside. That isn’t going to put a damper on the festivities though. This is a weekend for barbecues, cleaning off the beach chairs, and stocking up on sunscreen. Summer is here!!
I made this fun red, white, and blue poke cake for Dixie Crystals and am happy to have another fun patriotic recipe up my sleeve. I love anything red, white, and blue. The cake layer is homemade, and could not be any simpler to make. It’s so easy that you can actually mix it up in the pan that you are going to bake it in. After it bakes and cooled, you poke holes (a chopstick is the perfect tool) and pour red and blue jell-o into it. It soaks into the cake and when you slice it, the colors are amazing. It is topped with a fluffy vanilla frosting and has an extra layer of red and blue sprinkles. Super fun!
