Let’s just say they involve burnt popcorn, exploding mixers, and strawberry puree on my ceiling. I am going to call it a night, and hope that tomorrow is a better cooking experience. I wanted to wish you a very Happy Valentine’s Day, and leave you with a very simple, fail-proof (God willing) recipe. I made these for my son’s class for his birthday (thank goodness he asked for something other than a cupcake, it was nice to make something easy for a change) and the 2nd grade class asked me to make them for an upcoming class party. The highest compliment from a group of 8 year olds.

1 (10.5-ounce) bag mini marshmallows
1 (12-ounce) box Golden Grahams
1 (12-ounce) bag milk chocolate chips

smores bar recipeCrush the Golden Grahams. I like to have a good mix of rubble and bigger pieces.

smores bar recipeMelt the butter in a large pot. Add the marshmallow and cook until they melt completely. You could also do this in the microwave, but I don’t have one.

smores bar recipeMix in the Golden Grahams. Coat completely with the marshmallow.

smores bar recipePour the mixture into a 9×13 pan coated with cooking spray. You can sprinkle in some of the chips now, but they start to melt. I like my chips to stay whole, so I add them later.
