Around the ol’ Interwebs, you will be seeing a lot of pie recipes today, it is #PieDay afterall. I like pie. A lot. I love the idea of the food community coming together to celebrate the ultimate baked good (in my humble opinion, of course). But I just didn’t have it together to make one and get it posted in time. I have no good excuse other than I just cannot get into my groove in the kitchen right now. I am not sure what the deal is, but I think that it may have something to do with the beach calling my name. In a few days, I know that I will be itching to cook or bake something, have no fear, you will be seeing new recipes here (thankfully, I banked a few before we left Kansas). But for now, I am going to enjoy the first day of summer. Today, the beach is calling. Happy Summer Solstice.
I have a whole board of pies if you are looking for one to make today. Just in case.
I picked up a bag of sunflower seed cookies at the grocery store and immediately was obsessed. I had to get them out of the house, because I would have eaten the whole bag. The only thing that I did not like about these cookies was the price tag. Crazy expensive. I found this post about being a food blogger and had to chuckle. I immediately ate these cookies and thought to myself, I can make these better and cheaper (#5 on Irvin’s list). And you know what? I did. These are even better than the cookies that I bought in the store. These are equally addicting. Crispy on the outside and soft and chewy on the inside. They have whole grains and sunflower seeds, so they are totally a health food, right?
1/2 cup butter, room temperature
2 cups brown sugar
2 eggs
2 teaspoons vanilla
2 cups flour
2 cups old fashioned oats
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups raw sunflower seeds
Mix together butter and brown sugar. Mix it until really combined. It will not get light and fluffy because there is more sugar than butter.
Add eggs one at a time and vanilla.
Add flour, oats, baking soda, and salt.
Drop onto a parchment lined baking sheet using an ice cream scoop. Smooch them down a little bit.
Bake in a preheated 350 degree oven for 8 to 10 minutes.

That would give some nice salty kick. I love sunflower a lot but never really added in cookies.

I’ve said this before, but your son is just so cute. I love your pictures! So, I’m a pretty big fan of oats and sunflower seeds and have never put sunflower seeds in anything baked before..this is a great idea! I bet your cookies have such a unique and delicious flavor. Your recipe looks simple and delicious, can’t wait to try it out!

I’ve never had sunflower seeds. I’ve seen them in various trail mixes at the store, I’ve seen them enrobed in colorful candy-chocolate coatings, and I’ve seen their shells lying around on the ground from when people spit them out, but I’ve never tried them. These cookies look amazing though.

I plan to make these tomorrow. Crispy outside and chewy inside is the texture of choice at my house. If you made these three times in one week you probably can’t answer my question
Any idea how long these might stay fresh in an air-tight container? I am thinking these would mail well in a care package. For research purposes, I will hide one or two and see how they taste in 4 or 5 days.
I think that they would be great for a care package. I wrap 2 or 3 cookies in plastic wrap, then wrap the little packages in wrap and put them in a box. They should be great for at least a week.
I love the photos! I didn’t have enough time to get a pie together either.

My family really enjoyed these! Thank you. The crispy chewy texture was perfect and the brown sugar/ sunflower seed taste combination was special. I know you posted this in the summer but these cookies make great lunch box cookies. They are semi-healthy and are sturdy.
