Around the ol’ Interwebs, you will be seeing a lot of pie recipes today, it is #PieDay afterall. I like pie. A lot. I love the idea of the food community coming together to celebrate the ultimate baked good (in my humble opinion, of course). But I just didn’t have it together to make one and get it posted in time. I have no good excuse other than I just cannot get into my groove in the kitchen right now. I am not sure what the deal is, but I think that it may have something to do with the beach calling my name. In a few days, I know that I will be itching to cook or bake something, have no fear, you will be seeing new recipes here (thankfully, I banked a few before we left Kansas). But for now, I am going to enjoy the first day of summer. Today, the beach is calling. Happy Summer Solstice.

I picked up a bag of sunflower seed cookies at the grocery store and immediately was obsessed. I had to get them out of the house, because I would have eaten the whole bag. The only thing that I did not like about these cookies was the price tag. Crazy expensive. I found this post about being a food blogger and had to chuckle. I immediately ate these cookies and thought to myself, I can make these better and cheaper (#5 on Irvin’s list). And you know what? I did. These are even better than the cookies that I bought in the store. These are equally addicting. Crispy on the outside and soft and chewy on the inside. They have whole grains and sunflower seeds, so they are totally a health food, right?
Ingredients
1/2 cup butter, room temperature
2 cups brown sugar
2 eggs
2 teaspoons vanilla
2 cups flour
2 cups old fashioned oats
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups raw sunflower seeds
How to Make Sunflower Seed Cookies – The Steps
Step 1: Mix together butter and brown sugar. Mix it until really combined. It will not get light and fluffy because there is more sugar than butter.
Step 2: Add eggs one at a time and vanilla.
Step 3: Add flour, oats, baking soda, and salt.
Step 4: Mix until combined.
Step 5: Pour in sunflower seeds.
Step 6: Drop onto a parchment lined baking sheet using an ice cream scoop. Smooch them down a little bit.
Step 7: Bake in a preheated 350 degree oven for 8 to 10 minutes.
A reward for his hard work.

They are good but both to make mixing easier and to make the sunflower seed oil taste less dominant, I’d only put a cup of seeds in
