Barnyard Cake

barn cakeYesterday my baby turned 2. And I am a little bit sad about it. I love the idea that he is getting bigger but I will miss the fact that he is no longer a baby. To celebrate his 2nd birthday we had a farm themed party. I meant to do a huge post about it because there was some delicious food, but I forgot to take pictures. We were having too good of a time. But I did get a few snaps of birthday cake. There is no way that I can take credit for this cake. I found it in the March 2010 Family Fun magazine. You can find all of the directions here.

farm cakeThe cake was chocolate and the cupcakes were yellow cake. And a whole lot of buttercream frosting!

I used this buttercream frosting recipe:

3 cups confectioners sugar
1 cup butter
1 teaspoon vanilla
2 Tablespoons heavy cream

Using the whisk attachment mix together the sugar and butter. When it is combined, beat on medium and beat for 3 minutes. Add in the vanilla and enough cream to get a nice spreadable consistency. Beat for another minute.

A happy birthday was had by all and he loved his cake. That is all that matters right?
