1 box of your favorite cornbread mix + the ingredients to make it (this works even better if the cornbread is day old)
1/4 cup olive oil or melted butter
1/2 teaspoon salt
1/4 teaspoon pepper
Cube the cooled cornbread into a large bowl. Sprinkle with salt and pepper.
Spread evenly on a cookie sheet. I like to put mine on top of a cooling rack.
Bake at 375 degrees for 7-10 minutes or until toasty and brown.
Serve on your favorite salad.
