Flourless Chocolate Peanut Butter Cookies are a delightful cookie that is very similar to the famous coffee shop cookie.
Today is a perfect day for baking. It is pouring out, and rainy days are my favorite time to bake. As soon as I got up this morning, I set out some butter to soften. I have no idea what I’m going to make yet, but it is when I like to make something a little more challenging. Breads, rolls, pies – all perfect things for a rainy day.
Do you watch The Great British Bake Off? Here in the US, we are a few seasons behind, but it is the highlight of our Sunday night. All 5 of us cuddle on the couch and watch these British home bakers make the most glorious baked goods. These bakers are incredibly talented. For starters, I haven’t heard of quite a few of the things that they are asked to bake. Last night for the technical challenge the bakers had to make an apricot couronne. What the what? Secondly, they are making things that rival what you would find in a French bakery. That beautiful. Only I would imagine taste even better. The creativity in their flavors and bakes blow. my. mind.
Every week I’m in awe of the skill and talent these home bakers have. Watching this show has truly inspired me to become a better baker. It makes me want to learn the technical aspects of baking. I’m a good baker, but I can’t usually troubleshoot like they can. The judges (dreamy Paul Hollywood and Mary Berry) are refreshing. They are tough, but not mean. They have incredibly high expectations of the bakers and I’m always learning more about why some of the things I have attempted have failed.
I love how the bakers support and encourage each other. They are always helping each other out, and they seem like they are genuinely cheering each other on. It’s nice to see. Can you tell how obsessed with this show I am? (Also another reason why I’m so bummed that I’m not British.) I baked these Flourless Chocolate Peanut Butter Cookies for Dixie Crystals. I have to be honest, I was shocked at how much my family loved these cookies. They are great, but they are deep and rich. My kids usually go more for the milk chocolate, not the dark, but these were gone literally 2 hours after I put them on the counter. They taste just like the famous flourless chocolate cookie that you get at Starbucks, but in my humble opinion, these are even better.
