How to Bake the Cake

I used this Yellow Buttermilk Cake Recipe and this Lemon Filling Recipe. I baked one batch of the cake batter in a 14 inch pan and did it twice. I would bake it in a smaller pan to make the cake taller and have better support next time. Spread a thin layer of the lemon filling over the cooled cake.

Ingredients

I made a HUGE batch of whipped cream.

  • 4 cups of cream
  • 1 1/2 cups of powdered sugar
  • 2 packages of Whip-It (I have recently been introduced to this product and I love it! Thanks Corey)
  • 1 Tablespoon vanilla.

Instructions

Step 1: Whip it until it is on the firm side.

Step 2: Add an even layer of the whipped cream.

Step 3: Add a layer of mixed berries. I used raspberries, blueberries, and strawberries.

Step 4: Repeat with another set of layers. I add a ton more berries on the top layer. I wanted this cake to look rustic and homemade. See how it started to crack? It still tasted amazing and no one even noticed the crack. If they did, they were polite enough to not mention it. I very well may have cried if they did.

Topping Variations //

Mixed berries are easy to get nowadays in your favorite supermarket or grocery. But if you want to make it with different fruits then by all means do it. You can combine white chocolate and strawberries. This will make it classy and sweet with a hint of sourness. Banana and kiwi is a great combination as well. This will add a harmony of sweet and tartness from both fruits. These are just some examples but you can definitely try your own combinations.

How Long Can You Store a Fruit Basket Cake?

If you store a fruit basket cakes in a tightly covered container and keep it in the freezer you can keep it for 3 to 4 days and it will not lose it’s taste, quality, and nutrition. But you can extend its shelf life for up to a month in the freezer.

Can you Freeze a Fruit Basket Cake?

Yes you definitely can! But there’s a specific way to do it. First you freeze the cake without any covering for about 2 to 3 hours. Let the cream and fruit harden. Once the whole cake is frozen cover it with a layer of plastic wrap. Then cover it again with a layer of tin foil. This will prevent freezer burns and contamination. And will keep for 1 month. Once you need it just let it thaw gently in the fridge overnight before serving it.
