Maple Oatmeal Muffins

maple-oatmeal-muffins_10 I am sitting on my couch watching the Today show and trying to get my act together. After the craziness of last week, it is nice to be watching the news and hearing good, uplifting stories. My house is a mess, we had a busy weekend, and I am having a hard time finding my motivation. I really want to stay in my pj’s and watch cooking shows all day. My best friend and her family were in town and we had so much fun. I love seeing her, but I get a little down when we have to say goodbye. We are living a lot closer than we have for many years, and I am so grateful for that, but it is still hard to see her and beautiful babies go.

Today I am sharing a really easy and wholesome muffin recipe. I have made these a few times, and they have always been well received. They remind me of baked oatmeal in muffin form. Hearty, healthy, and heavenly when served warm with a little butter. Feel free to add some blueberries or raspberries, I think that these would be great with some fruit baked inside.I have also used soy and almond milk in place of the milk and it has worked perfectly.

Happy Earth Day! maple-oatmeal-muffins1 cup oats (quick-cooking or regular)
1/2 cup milk
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
3/4 cup pure maple syrup
1/4 cup melted butter
1 egg
1/2 cup chopped pecans

maple oatmeal muffinsIn a small bowl, combine oats and milk. Let stand for 5 minutes.

maple oatmeal muffin recipePour oat mixture into flour. Stir until just moistened.

maple oatmeal muffin recipeSpoon batter into a muffin tin lined with 12 paper liners. Sprinkle with reserved pecans.
maple oatmeal muffin recipeBake in a preheated 400 degree oven for 15 to 18 minutes.

Maple Oatmeal Muffiins


Ingredients

  • 1 cup oats (quick-cooking or regular)

    Its always fun to visit with friends you don’t get to see very often. I find every Monday hard to get motivated so you are not alone. These Muffins look really yummy btw πŸ™‚

    OMG these were great and so easy to make. Everything done in 30 minutes (including dishes!). THe kids love them too.

    These were delicious! The texture was nice, the maple flavor was lovely, and they made for a perfect breakfast. I used extra cinnamon and swapped out the flour for whole wheat white flour and wheat germ, and blogged it here.
