I am sharing a recipe for muffins that are easy to make, wholesome, and well-liked.

I am sitting on my couch watching the Today show and trying to get my act together. After the craziness of last week, it is nice to be watching the news and hearing good, uplifting stories. My house is a mess, we had a busy weekend, and I am having a hard time finding my motivation. I really want to stay in my pj’s and watch cooking shows all day. My best friend and her family were in town and we had so much fun. I love seeing her, but I get a little down when we have to say goodbye. We are living a lot closer than we have for many years, and I am so grateful for that, but it is still hard to see her and their beautiful babies go.

Today I am sharing a really easy and wholesome muffin recipe. I have made these a few times, and they have always been well-received. They remind me of baked oatmeal in muffin form. Hearty, healthy, and heavenly when served warm with a little butter. Feel free to add some blueberries or raspberries, I think that these would be great with some fruit baked inside. I have also used soy and almond milk in place of the milk and it has worked perfectly.

Delicious Maple Oatmeal Muffins Ingredients

  • 1 cup oats (quick-cooking or regular)
  • 1/2 cup milk
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3/4 cup pure maple syrup
  • 1/4 cup melted butter
  • 1 egg
  • 1/2 cup chopped pecans

How to Make – The Steps

Step 1: In a small bowl, combine oats and milk. Let stand for 5 minutes.

Step 2: In a large bowl, whisk together flour, baking powder, salt, and cinnamon.

Step 3: Add maple syrup, butter, and egg to the oat mixture.

Step 4: Pour the oat mixture into the flour. Stir until just moistened.

Step 5: Fold in half of the pecans. Spoon batter into a muffin tin lined with 12 paper liners. Sprinkle with reserved pecans. Bake in a preheated 400-degree oven for 15 to 18 minutes.
