Mint Brownies

Ingredients

For the brownies

  • 2 sticks of butter room temperature
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • 3/4 cup cocoa
  • 1/2 teaspoon baking powder
  • 1 package mint chips

For the Frosting

  • 1/2 cup melted butter
  • 1/3 cup unsweetened cocoa powder
  • 2 cups confectioners sugar
  • 2 Tablespoons milk
  • 1 teaspoon vanilla

For the Boozy Glaze

  • 1 1/4 cup confectioners sugar
  • 1 Tablespoon milk
  • 1 Tablespoon creme de menthe
  • green food coloring

Instructions

  1. Beat together the butter and sugar. Beat it until it is really light and fluffy.
  2. Add the eggs one at a time, beating well after each addition.
  3. Add the vanilla.
  4. In another bowl, whisk the dry ingredients.
  5. Add the dry ingredients to the butter mixture.
  6. Stir in the mint chips.
  7. Spread the brownie batter into a 9×13 pan coated with cooking spray.
  8. Bake in a preheated 350 degree oven for 30 to 35 minutes or until the brownies are set.
  9. Put all of the frosting ingredients in the bowl of a mixer and mix until smooth.
  10. Frost the brownies with the chocolate frosting.
  11. Whisk together all of the glaze ingredients. I put my glaze into a squeeze bottle. I am super fancy. But you could also use a spoon.
  12. Drizzle the glaze over the brownies in a back and forth motion.
  13. Cut into squares. And enjoy.
