Pumpkin Sheet Cake with Cinnamon Cream Cheese Frosting is a simple pumpkin sheet cake topped with a fall spiced frosting. Everyone will love this cake.

Baking is one of my favorite things to do. More often than not my family is unaffected by my baked goods. They are so used to having cookies, cakes, and pies around that they are pretty picky about what they really love. They are hard to impress. I have teenagers, who are supposed to eat most anything, but usually, I get a “yeah, it’s okay” or a grunt. Frequently I end up giving away what I’ve made. I’m pretty popular with the people in our building.

More often than not, I bake because I love to do it. It relaxes me. Great ideas come to me in the shower and when I am baking. If I am stressed out, I turn on some music, light some candles, and get out the butter and sugar. One evening after a particularly trying day, I looked through my cabinets for something to make. I found a lonely can of pumpkin puree. I am the only person in my house that loves pumpkin, but I wanted to make something fall-is and there is nothing better than pumpkin for that.

This cake is so easy to make. Mix wet into dry and pour it into your pan. So easy. I wanted a really spiced frosting to go on top, so I added a lot of cinnamon to the cream cheese frosting. This cake is really delicious.

After taking some pictures of this cake I left it on the counter. I was going to give to some friends, but it was almost gone when I went to cut it up and package it. William loved this cake. Truthfully, I was shocked he tried it, he swears he doesn’t like pumpkin, but he ate 3/4 of this cake himself. I’d say that is a win.

Pumpkin Sheet Cake with Cinnamon Cream Cheese Frosting

Ingredients

Pumpkin Sheet Cake:

  • 4 eggs
  • 2 cups sugar
  • 1 (15 oz.) can pumpkin puree
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon allspice
  • 1/4 teaspoon freshly ground nutmeg

Cinnamon Cream Cheese Frosting:

  • 1 (8-oz) package cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 3 cups powdered sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 1 teaspoon salt

Instructions

Preheat oven to 350°. Spray a 9×13 baking pan with baking spray.

In a large bowl, whisk together eggs, sugar, pumpkin, oil, and vanilla until smooth.

Sift over flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, and nutmeg.

Mix until just combined, being careful not to over mix.

Pour batter into prepared pan.

Bake for 35 to 45 minutes, or until a toothpick comes out clean. Let cool completely on a wire rack.

To make the frosting, add the cream cheese and butter to the bowl of a stand mixer. Beat on medium speed for 3-5 minutes, scraping the bowl at least once. Add half of the sugar and mix on low until it comes together, mix for a minute. Add remaining sugar and beat for 2 to 3 minutes until smooth. Mix in cinnamon, vanilla, and salt and beat until combined. Add a splash of milk if the frosting needs to be thinned.

Spread the frosting over the cooled cake.

    Oh I love a cake that is this easy to make. I wish I could bake for Thanksgiving but won’t be able too. I am now going to plan on making it when we get home next week – so easy and so indulgent.
