Day 3 of Chili Week! It is no secret that I love a soup, stew, or chili recipe so this week has been one of my favorites. 100% honest – I’ve made my chili week recipes over and over again and can’t pick a favorite. Slow Cooker Buffalo Chicken Chili makes the chicken wing lovers happy, and the Slow Cooker Green Chicken Chili with Baked Tortilla Straws is one that everyone in my house loves. You really can’t go wrong with any of these. They are going to be very popular this weekend at your Super Bowl parties.

Slow Cooker Smoky Chicken Chili is a winner. Please don’t be intimidated by the ingredient list. It might look on the long-ish side, but it is mostly spices. This recipe is great for cleaning out the spice cabinet. This chili is low on the effort scale, high on the deep, developed flavor. So, so good. I’ve made this many times and fall in love, even more, every time. Like most chili recipes, this is a perfect make-ahead meal. Letting the chili hang out in the fridge for a day or two just helps to bring out even more smoky flavor.

The key to the smokiness is chipotle peppers, smoked paprika, and just a little dark brown sugar. The only real work is chopping a few onions and peppers. You can do that, right?

Cover everything with fire roasted tomatoes and let the slow cooker do all the work. Serve the chili with lime wedges, shredded cheese, sour cream, and tortilla straws.

    A quick note to tell you what a hit your Smoky Chicken Chili was at our house last Sunday. When I was putting it together no one was too enthused because of “Oh, I’ve had that at work, at church, etc.” However as it was cooking the odor permeated the house & I found people roaming around to find the source. When it was done I didn’t have to call anyone twice–they were waiting with bowls in hand. It was delicious & has been shared, e-mailed, & printed; it is a Keeper! Thank you Bree. An aside: I used a Le Crueset pot in the oven rather than a slow cooker because I prefer the oven. (An AF Officers Wife who enjoys your site.)

    I’m going to try this today! Have you tried freezing it? We have an annual Christmas Carol party where I make 3-4 chili’s. I try and make them ahead and freeze. Wondering if this was a good candidate?

      I haven’t but I’m fairly positive that it will freeze well.
