Strawberry Ice Cream Sodas – A homemade strawberry sauce made with fresh strawberries and jam turned into an ice cream soda.

I feel like I say this every time I sit down to write a blog post, but these ice cream sodas just might be my favorite thing I’ve made lately.

I had some beautiful berries and was in the mood for ice cream (not to mention I got these cute old-fashioned milkshakes glasses on sale), so I put them all together into this ridiculously delicious and refreshing ice cream soda. It’s like summer in a (really cute) glass.

I think that these would be so fun to have at an end of summer barbecue. Or on a rainy weekend when you are going a little stir crazy and really want to be sitting on the beach instead of watching football (I’m soooo not ready for football yet, doesn’t it feel like it gets earlier and earlier every year?). Either way, these are perfect for either occasion.

My sister gave me the tip to add a little strawberry jam to my strawberry sauce. It sounds a little weird, but it makes the strawberry more strawberry-y. If you have extra, it goes really well on pancakes or drizzled on a scone.

Ingredients

  • 1 pound strawberries
  • 1/3 cup sugar
  • 2 Tablespoons strawberry jam
  • 1 pint vanilla ice cream
  • 1 pint strawberry ice cream
  • Sparkling water

How to Make Strawberry Ice Cream Sodas

Step 1: Line a rimmed baking sheet with parchment paper. Scoop the ice cream onto the paper and freeze until ready to use.

Step 2: Rinse the strawberries and cut the stems off. Add to a medium saucepan with sugar and jam.

Step 3: Bring to a boil.

Step 4: Reduce heat to low, and cook for 10 to 15 minutes, or until the berries have broken down and are soft.

Step 5: Put the strawberry sauce through a strainer to get rid of the seeds. Pour the syrup into a bottle.

Step 6: I found these cute old-fashioned soda glasses at Crate and Barrel for $1.97, score! You can use any large glass. Slice a strawberry almost all the way through and attach it to the side of the glass.

Step 7: Add a scoop of vanilla and a scoop of strawberry to a glass. Pour about 2 tablespoons of strawberry syrup over the ice cream.

Step 8: Top with sparkling water.

Step 9:  Add a straw and sip!
