Preheat the oven to 350°F and spray a casserole dish with nonstick spray.
Add the cans of corn with the liquid into a bowl. Then add the eggs, sour cream, and melted butter and mix until completely incorporated.
Pour in the Jiffy mix, cayenne, cheddar, green onion, salt, and pepper. Use a spoon to mix it together.
Pour the mixture into the prepared casserole dish and bake in the center of the oven for 45-55 minutes or until golden brown on top and cooked through. Remove from the oven and set aside to cool a little before serving.
