While the pasta is cooking, heat the olive oil in a large skillet and add the diced chicken. Cook the chicken for 2 minutes on each side until golden brown. Add the chopped garlic to the skillet and continue to cook for another minute until fragrant.

Add the Boursin cheese and some of the pasta water to help dissolve the cheese. Stir the sauce until the cheese has melted and lower the heat to a simmer. Simmer for 4-5 minutes until the sauce thickens.

Add the cooked pasta to the skillet and toss with the Boursin cheese sauce. If the sauce is too thick add an extra dash of pasta water.
