Whole Wheat Spiced Pumpkin Muffins


Ingredients

  • 1 ½ cups whole wheat flour
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1 ½ teaspoons baking soda
  • 1 ¼ teaspoons salt
  • 1 ½ cups sugar
  • ½ cup water
  • ⅔ cup oil
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 (15-ounce) can pumpkin puree

Topping:

  • 2 Tablespoons sanding sugar (or regular sugar)
  • 1 teaspoon cinnamon
  • ¼ cup pepitas

Instructions

  1. Preheat oven to 350°. Line 2 muffin tins with paper liners.
  2. In a medium bowl, whisk together whole wheat flour, all-purpose flour, spices, baking soda, salt, and sugar. Set aside.
  3. In another bowl, whisk together water, oil, eggs, vanilla, and pumpkin.
  4. Pour the wet ingredients into the dry, and stir until just combined, being careful to not overmix.
  5. Divide batter evenly among muffin cups.
  6. In a small bowl, mix together sanding sugar and cinnamon. Sprinkle cinnamon sugar and pepitas over batter.
