Big Batch Bacon Caprese Egg Sliders

Ingredients
  

Caprese Topping:

  • 1 pint sweet tomatoes halved
  • 1 clove garlic minced
  • ¼ cup red onion minced
  • 2 Tbsp. fresh basil chopped
  • 2 Tbsp. olive oil
  • 1 tsp. salt
  • ½ tsp. pepper

Garlic Oil:

  • 1 Tbsp. olive oil
  • 1 garlic clove minced
  • Pinch of salt
  • Pepper
  • ¼ tsp. dried oregano

Assembly:

  • 1 package KING’S HAWAIIAN® Original Hawaiian Sweet Rolls
  • 12 eggs
  • 2 Tbsp. heavy cream
  • 1 tsp. salt
  • ½ tsp. pepper
  • 2 Tbsp. butter
  • 1 ½ cups shredded cheese mozzarella and cheddar
  • 12 pieces cooked bacon chopped

Instructions
 

  • Prep your caprese topping. Slice the tomatoes in half. Add garlic, red onions, salt, pepper, olive oil, and basil. Stir to combine. Set aside. You can make this a day ahead of time; keep it in an airtight container in the fridge.
  • Whisk eggs, cream, salt, and pepper until smooth.
  • Heat a large sauté pan over medium-low heat. Melt butter. Pour in eggs and slowly stir. Cook slowly until the eggs are just set.
  • Slice the Sweet Rolls in half with a serrated knife. Place the bottoms in a parchment-lined 9" x 13" dish. Spoon eggs over the rolls.
  • Top with caprese topping.
  • Add bacon.
  • And lots of cheese.
  • Add the top of the rolls and press gently. Mix olive oil, garlic, salt, pepper, and oregano in a small bowl for brushing onto the tops of the rolls.
  • Brush the rolls with garlic oil.
  • Bake for 15 minutes or until the cheese is melted and the rolls are golden brown.
  • Serve with fresh fruit, more bacon, and anything else you like for brunch.
