Ingredients
  

  • 1 cup dry orzo pasta
  • 2 tbsp olive oil
  • 2 cloves garlic crushed
  • 2 cups cherry tomatoes cut in half
  • 1/4 cup parmesan cheese grated
  • 1 small handful of basil torn
  • salt and pepper to taste

Instructions
 

  • Bring a pot of water to a boil, then add a pinch of salt and the orzo pasta. Cook for about 5 – 8 minutes, or follow package instructions.
  • Once the pasta is cooked, reserve 2 tablespoons of pasta water then drain and toss in half of the olive oil.
  • In a pan over medium heat, drizzle in the rest of the olive oil and fry the garlic and tomatoes for 5 minutes. Keep tossing to make sure the tomatoes cook on all sides and the garlic doesn’t stick to the bottom.
  • Remove the pan from the heat and add in the parmesan and the pasta water and stir. The parmesan and the pasta water will help the tomato juices make a nice sauce to coat the pasta. Add in the torn basil, salt, and pepper and toss.
  • Add in the cooked orzo pasta, mix it all together and serve.
