Ingredients
  

  • 1 bag tortilla chips
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 2 cloves garlic minced
  • 1 package taco seasoning
  • 1 cup corn kernels
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1 tomato diced
  • 1 small red onion diced
  • 1 avocado diced
  • 2 jalapeños sliced
  • 2 tbsp fresh cilantro leaves
  • salt to taste

Instructions
 

  • Heat the oven to 400° F.
  • In a pan over medium heat, sauté the ground beef and corn kernels with the taco seasoning and a pinch of salt until brown, about 3-5 minutes. 
  • Arrange the tortilla chips on a large sheet pan and cover with the ground beef and corn mix, then sprinkle the cheese on top. Place in the oven to bake for 5 - 8 minutes, or until the cheese is melted.
  • Take out the oven and top with diced tomato, red onion, avocado, jalapeños, and cilantro.
