Ingredients
  

  • 1 lb Brussels sprouts
  • ¼ cup cranberries
  • ¼ cup pecorino cheese grated
  • 1 red apple
  • 2 tbsp mint leaves
  • 1 tbsp wholegrain mustard
  • 3 tbsp Olive oil
  • 2 tbsp lemon juice
  • salt and pepper

Instructions
 

  • Start by finely slicing the Brussels sprouts. 
  • Slice the apple very finely and remove the core.
  • Add the mustard, olive oil, lemon juice, salt, and pepper to the serving bowl and mix together.
  • Add the Brussels sprouts, cranberries, apple slices, and pecorino cheese into the bowl with the dressing and toss together.
