- 1 lb Brussels sprouts
- ¼ cup cranberries
- ¼ cup pecorino cheese grated
- 1 red apple
- 2 tbsp mint leaves
- 1 tbsp wholegrain mustard
- 3 tbsp Olive oil
- 2 tbsp lemon juice
- salt and pepper
Start by finely slicing the Brussels sprouts.
Slice the apple very finely and remove the core.
Add the mustard, olive oil, lemon juice, salt, and pepper to the serving bowl and mix together.
Add the Brussels sprouts, cranberries, apple slices, and pecorino cheese into the bowl with the dressing and toss together.
