Ingredients
  

  • 3 cups flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon freshly grated nutmeg
  • 1 cup butter room temperature
  • 1 cup light brown sugar
  • 3/4 cup sugar
  • 2 eggs plus 1 yolk
  • 2 teaspoons vanilla
  • 1 cup chocolate chips or 250 g bar dark chocolate

Instructions
 

  • Preheat oven to 350°. Line a 9x13 pan with parchment paper, letting the sides overhang. Spray with cooking spray and set aside.
  • Whisk together flour, baking soda, salt, and spices in a bowl. Set aside. 
  • Cream butter and both sugars in an electric mixer on medium-high speed until light and fluffy, about 5 minutes. Add the eggs, yolk, and vanilla. Beat until combined. 
  • Slowly add the dry ingredients and mix until just combined. 
  • Press into prepared pan. Bake for 22 to 28 minutes.
