- 1 English cucumber peeled and grated
- 1 cup plain Greek Yogurt
- 3 Tablespoons olive oil
- 2 Tablespoons lemon juice
- 1 garlic clove minced
- 1 Tablespoon minced fresh basil
- 1 Tablespoon minced fresh mint
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Get as much water out of the grated cucumber as possible. Wrap in a kitchen towel and squeeze out excess water.
Add your strained yogurt or your Greek yogurt to a bowl.
Add olive oil, lemon juice, garlic, basil, mint, salt, pepper, and dry cucumber.
Stir to combine.
Chill for 2 hours before serving.
