Roasted Summer Berries

Ingredients
  

  • 1/2 pint black raspberries
  • 1/2 pint red raspberries
  • 1 pint blueberries
  • 1 vanilla bean seeded and scraped
  • 3 Tablespoons sugar

Instructions
 

  • Rinse the berries and put in an oven safe casserole dish. Add the vanilla bean and add the pod to the dish. Sprinkle with sugar. Give a toss.
  • Roast in a preheated 400 degree oven for 45 minutes to 1 hour. The berries will break down and make a thick syrup.
  • Serve with vanilla ice cream or whipped cream.
