Ingredients
  

  • 3 cups flour
  • 1 ½ cups sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • ¾ cup vegetable oil
  • ¾ cup whole milk
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups 12 oz. bag semi-sweet chocolate chips
  • Sanding sugar

Instructions
 

  • Preheat oven to 400°. Line two muffin tins with paper liners. Set aside. 
  • In a large bowl, whisk flour, sugar, baking powder, and salt. Set aside.
  • In another bowl, whisk together oil, milk, vanilla, and eggs. 
  • Make a well in the center of the dry ingredients and pour in the wet ingredients. 
  • Mix until combined, being careful not to overmix the batter. It will still have some lumps. 
  • Add chocolate chips and fold through. 
  • Scoop the batter evenly into the muffin cups. 
  • Bake for 18 to 20 minutes or until the tops are golden brown and a toothpick inserted comes out clean. 
  • Remove from pan and let cool on a wire rack.
