Heat a large pot over medium to high heat and add in the olive oil, onion, garlic, and celery and sauté for 2 – 3 minutes.
Once the onion mix has cooked until translucent add the carrots, potatoes, cabbage, chopped tomato, vegetable stock, oregano, and salt and pepper into the pot. Stir, cover, and bring to a boil then turn the heat down and simmer for 30 minutes.
Stir in the beans and kale. Then taste and season the soup to your preference.
