Ingredients
  

  • 2 tbsp olive oil
  • 1 brown onion diced
  • 2 cloves garlic crushed
  • 1 rib celery chopped
  • 2 carrots peeled and chopped
  • 2 medium potatoes peeled and diced
  • 3 cups green cabbage shaved
  • 1 can chopped tomatoes
  • 4 cups vegetable stock
  • 1 can butter beans drained and rinsed
  • 1 cup kale chopped
  • 1 tsp dried oregano
  • salt and pepper

Instructions
 

  • Heat a large pot over medium to high heat and add in the olive oil, onion, garlic, and celery and sauté for 2 – 3 minutes.
  • Once the onion mix has cooked until translucent add the carrots, potatoes, cabbage, chopped tomato, vegetable stock, oregano, and salt and pepper into the pot. Stir, cover, and bring to a boil then turn the heat down and simmer for 30 minutes.
  • Stir in the beans and kale. Then taste and season the soup to your preference.
