Ingredients
  

  • 9 large russet potatoes
  • 1 cup sour cream
  • 8 ounces cream cheese softened
  • 1/2 teaspoon onion salt
  • 1/4 teaspoon garlic powder
  • 1 teaspoon fresh chives minced, plus more for garnish
  • 1/4 cup dry bread crumbs
  • 1/2 cup sharp cheddar cheese grated
  • 1 tablespoon unsalted butter melted

Instructions
 

  • Preheat your oven to 350°F. Grab a 2-quart casserole dish, give it a little love with some non-stick spray or butter, and set it aside.
  • Fill a large pot with water, add a pinch of salt, and bring it to a rolling boil. Meanwhile, peel your potatoes and cut them in half to speed up cooking. Once boiling, carefully add your potatoes and cook them until they're fork-tender, which should take about 15-20 minutes.
  • Drain the potatoes well and transfer them to a large mixing bowl. Mash until smooth.Stir in the sour cream, cream cheese, onion salt, garlic powder, and minced chives. Mix until well combined and creamy.
  • Spoon your potato mixture into the prepared casserole dish. Spread it out evenly with a spatula, creating a smooth top.
  • In a small bowl, mix the melted butter with the dry bread crumbs. Sprinkle this mixture evenly over the top of your potatoes
  • Bake for 40-50 minutes. Target a golden brown top and bubbly edges.
  • Sprinkle the grated sharp cheddar cheese over the top. The heat from the potatoes will melt the cheese.
  • Garnish with additional minced chives. Serve it up hot!
