In a medium bowl, whisk together the coconut milk, chia seeds, cocoa powder, maple syrup, and vanilla extract until the mixture is smooth and the cocoa powder is fully integrated.
Cover the bowl with a lid or plastic wrap and place it in the refrigerator. Let the pudding set until thick (at least 4 hours but overnight is ideal).
