  • 3 cups fresh corn kernels from about 4 ears of sweet corn
  • 1 cup chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeño minced
  • 2 medium limes juiced
  • Kosher salt and black pepper to taste
