Ingredients
  

  • 2 chicken thighs skinless and boneless
  • 1 tbsp extra virgin olive oil
  • pinch of salt and black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 large egg
  • 1 tbsp milk
  • 1/2 cup all-purpose flour
  • 1/2 cup panko bread crumbs
  • 1 tbsp Parmesan grated
  • fresh parsley chopped
  • lemon slices (for garnish)

Instructions
 

  • Preheat your oven to 400°F. Pound each chicken thigh to 1/4-inch thickness.

  • Rub the chicken thighs with the garlic powder, smoked paprika, salt, and black pepper. Drizzle with the olive oil and let marinate for 15 minutes

  • Line a baking sheet with parchment paper. In a large bowl whisk together the egg and milk.

  • Fill a shallow dish with flour. In another dish combine the panko breadcrumbs with the Parmesan. Coat the prepared chicken with the flour, then dip into the egg mixture then dredge it through the panko mixture. Press to coat well.   • Spray the chicken with cooking oil spray. Place the chicken onto the sheet and bake in the oven for 10–15 minutes until golden brown. We want to tan the chicken, not give it a sunburn!

  • Serve with lemon slices and sprinkle with fresh chopped parsley. Enjoy!
