Ingredients
  

Homemade Mayonnaise:

  • 3 egg yolks
  • 1 tsp lemon juice
  • 1 tsp white vinegar
  • 1 tsp dry mustard
  • 1 tsp salt
  • 1 tsp sugar
  • cayenne pepper to taste
  • 1 1/2 cups canola oil

Pimento Cheese:

  • 1 cup mayonnaise
  • 1/2 tsp sage finely chopped
  • 1 tsp lemon juice
  • 1 tsp dry mustard
  • 1/4 tsp cayenne pepper
  • 1/2 tsp Worcestershire sauce
  • 2 cups Colby cheese shredded
  • 2 cups sharp cheddar cheese shredded
  • 1 4 oz jar chopped pimentos, drained
  • salt and pepper
  • hot sauce

Instructions
 

  • Start by making the mayonnaise. Add the egg yolks, lemon juice, vinegar, dry mustard, salt, sugar, and cayenne to the food processor.
