Ingredients
  

  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts cut into 1-inch pieces
  • Salt and pepper to taste
  • 1 red bell pepper diced
  • 1 cup pineapple chunks
  • 1 tablespoon cornstarch
  • Cooked white rice for serving

Instructions
 

  • In a small bowl, mix together soy sauce, brown sugar, garlic, ginger, and red pepper flakes, if using. Set aside.

  • Heat olive oil in a large skillet over medium heat. Season chicken pieces with salt and pepper, then add to the skillet. Cook until golden and no longer pink, about 5-7 minutes.
  • Add diced red bell pepper and pineapple chunks to the skillet. Cook for 3-4 minutes, until the peppers are slightly softened.

  • Pour the soy sauce mixture over the chicken and vegetables. Stir to combine.

  • Dissolve cornstarch in 2 tablespoons of water and add to the skillet. Stir well and allow the sauce to thicken for about 2 minutes.
