Homemade Salmon Patties

Ingredients
  

  • 1 - 14.75 oz can salmon drained
  • 2 eggs
  • 2 green onions chopped
  • 3/4 cup breadcrumbs
  • 1 tsp dill
  • 1 tsp lemon juice
  • Salt and pepper
  • Vegetable oil

Instructions
 

  • Begin by placing a sturdy, heavy-based pot over medium heat. Allow the oil to warm up until it sizzles when you drop a little crumb in.
  • In a mixing bowl, combine the canned salmon, eggs, finely chopped spring onion, breadcrumbs, dill, lemon juice, and a pinch of salt and pepper.
  • Mix everything together until they are well combined.
  • Divide this mixture into four equal portions. With your hands, gently mold each portion into a patty shape.
  • Carefully, place your patties into the hot oil. Allow them to sizzle away for about 5 minutes on each side until they are golden brown.
  • Once the patties are golden brown, delicately remove them from the oil. Drain off the excess oil and then place them onto a paper towel to drain more.
