Begin by placing a sturdy, heavy-based pot over medium heat. Allow the oil to warm up until it sizzles when you drop a little crumb in.
In a mixing bowl, combine the canned salmon, eggs, finely chopped spring onion, breadcrumbs, dill, lemon juice, and a pinch of salt and pepper.
Mix everything together until they are well combined.
Divide this mixture into four equal portions. With your hands, gently mold each portion into a patty shape.
Carefully, place your patties into the hot oil. Allow them to sizzle away for about 5 minutes on each side until they are golden brown.
Once the patties are golden brown, delicately remove them from the oil. Drain off the excess oil and then place them onto a paper towel to drain more.
