Ingredients
  

  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 2 1/2 tablespoons all-purpose flour
  • 2 pinches kosher salt
  • 1 large egg lightly beaten
  • 2 1/4 teaspoons vanilla extract
  • 1 1/2 cups thick-cut rolled oats

Instructions
 

  • Preheat oven to 350°F. Line baking sheets with parchment paper.
  • In a saucepan over medium heat, melt the butter and brown sugar together, stirring until smooth.

  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
