Preheat your oven to 325°F. Spray a 9-inch springform pan with baking spray. In a food processor, pulse Oreo cookies for the crust until they form fine crumbs.
Transfer the crumbs to a bowl, add the melted butter and mix until evenly moistened. Press the crumb mixture firmly into the bottom and about 1 inch up the sides of springform pan.
In a large bowl, beat the softened cream cheese until smooth and lump-free. Add granulated sugar and mix well. Stir in sour cream and vanilla extract. Then add the eggs one at a time, mixing gently after each addition. Fold in the roughly chopped 15 Oreo cookies until evenly distributed.
Pour the cheesecake batter over the crust and smooth the top with a spatula. Bake in the preheated oven for 55 to 65 minutes until the edges are set and the center still has a slight jiggle.
Remove from the oven and allow to cool at room temperature for about 1 hour. Then refrigerate for at least 6 hours, or overnight, until fully set.
Decorate the top of the cheesecake with whipped cream. If desired, add whole or crushed Oreos for garnish.
