  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 1/4 pounds chicken breast cut into bite-sized pieces
  • 4 medium carrots sliced into rounds
  • 4 stalks celery sliced
  • 1/2 teaspoon dried thyme
  • 8 cups low-sodium chicken broth
  • 2 bay leaves
  • 2 cups egg noodles

Instructions
 

  • Heat olive oil in a large pot over medium heat.
