Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 2 cups chicken broth
  • 1 can 14 oz crushed tomatoes
  • 1 can 14 oz coconut milk
  • 2 cups cooked chicken shredded
  • Salt to taste
  • Fresh cilantro chopped for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic, sauté until onion is translucent, about 5 minutes.

  • Stir in garam masala, cumin, turmeric, ginger, cayenne pepper, and cinnamon. Cook until fragrant, about 1 minute.

  • Pour in chicken broth and crushed tomatoes. Bring to a simmer.

  • Stir in coconut milk and shredded chicken. Season with salt to taste.

  • Continue to simmer for 20 minutes, allowing the flavors to meld together.
