This could not be any easier and it is my absolute favorite side dish with Mexican food.
Take a can of red kidney beans (black beans are great too) and rinse them really well. Put them in a medium hot saute pan with some olive oil, maybe 2 Tablespoons? Turn them around in the pan for a minute. Add 2-3 cloves of garlic (I like a lot of garlic), about 1 Tablespoon oregano and salt and pepper. Heat the beans through and they are done. So good. I usually eat this instead of beef or chicken when I make tacos for my family.
