I used to stop at a local coffee shop to pick up my morning joe and two egg bites. While I loved the routine and enjoyed the food and drink, my wallet was taking a hit! Five days a week, and the little treats started to add up. I invested in a decent coffeemaker and figured out how to make my own egg bites, which I actually like even better than the store-bought ones! Keep scrolling to find out why.

Egg bites are a great way to get some protein and keep you going through a busy morning. Additionally, they are a nice option for people like me who aren’t super hungry in the early morning but want to avoid the 9 AM grab-a-donut move that only results in a sugar crash later on.

You will love bacon-egg bites because they are savory, soft and fluffy, and taste great. They’re economical to make at home, and the best part is that you can make a batch on the weekend and freeze most of them for up to two months. On a busy, early morning, grab a couple out of the freezer and microwave them without any fuss or trouble. Bacon-egg bites are also a great addition to a big breakfast spread. Add a plate of them next to sweeter mains like pancakes or French toast to provide some tasty protein options.

Why put cottage cheese in eggs?

You might be surprised to see cottage cheese as an ingredient in bacon-egg bites. Especially if you’re not a cottage cheese fan, you might be tempted to skip or replace it—but don’t! Cottage cheese is an important structural ingredient in this recipe as well as in regular scrambled eggs. It actually helps the eggs cook fluffier and lighter. Plus, it adds extra protein, too.

How do I store leftovers?

Let the bites cool and wrap them individually in plastic wrap. Toss the wrapped bites into a resealable plastic bag and freeze for up to 2 months. Defrost gently in the microwave. Bacon-egg bites will also keep in an airtight container in the fridge for up to 4 days.

Serving suggestions

Bacon-egg bites with some fresh fruit and a mug of coffee is a great start to the day. If you have time, make Yogurt Parfaits to go along with your bacon-egg bites. To yield more egg bites, make them in a mini-muffin pan and check at 15 minutes for doneness.

At a larger brunch or breakfast, serve bacon-egg bites alongside main dishes like French Toast Brûlée or Indulgent Fluffy Blueberry Pancakes. They provide a nice bite of savory protein next to these sweeter offerings, and it’s an easy recipe to double or triple for a big crowd.

Ingredients
  

  • 6 slices bacon
  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • Nonstick cooking spray

Instructions
 

  • Preheat the oven to 300°F.
  • In a skillet over medium heat, cook the bacon until crisp. Drain on paper towels and crumble.
  • In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.

  • Stir in the shredded cheddar cheese and crumbled bacon.

  • Spray a muffin tin with nonstick cooking spray. Pour the mixture evenly into the cups, filling each about 3/4 full.

  • Fill a 9×13-inch pan with water, about 1/4 full. Position it on the bottom rack of the oven to generate steam for gently cooking the eggs.
  • Place the muffin tin filled with the egg bite mixture onto the middle rack of the oven. Bake for 20 to 22 minutes, or until the centers are set.
  • Let the egg bites cool in the pan for 5 minutes before removing. Serve warm.
