Pancake In A Mug is one of the easiest and tastiest personal breakfasts I’ve ever had, and you’ll probably love it as much as I do!

I am a massive fan of pancakes. I like to make them for my kids and am known for big, fluffy batches of them that I save to reheat for breakfast throughout the week. But, every once in a blue moon, I like to jazz things up with my pancakes! And this got me thinking… what if I took out the ‘pan’ in pancakes?

Luckily, there’s this recipe! Fluffy and customizable, you really can’t ask for more with this moist and straightforward meal in a cup. Personally, when I have time to just worry about myself and not feed anyone else, it feels luxurious to sit on the porch, enjoy the morning air, and have my little pancake in a mug alongside a good cup of coffee.

What’s particularly noteworthy and wonderful about this recipe is how easy it is. I’m so used to making a big batch of homemade pancakes, which takes up a decent chunk of the morning. Being able to make a single, fresh pancake in a mug in just a few minutes really saves a lot of time and means I can have a little more time to relax before attacking the day.  

Ingredients for Pancake In A Mug: all-purpose flour, brown sugar, granulated sugar, baking powder, whole milk, vegetable oil, vanilla extract, butter, and fresh berries.

Vanilla secret

My mom is the one who taught me to make pancakes and always called vanilla extract her secret ingredient. A little dash of the stuff uplifts any pancake recipe, including this one in a mug. Don’t skip this step, as it will really make the difference between just something to eat and a delicious breakfast. If you’re not a fan of vanilla, try almond extract instead.

How do I store leftovers?

I would not recommend storing this pancake in a mug. This recipe really works best as a one-time, made-to-order meal that you eat once you make it. While regular pancakes can be stored for later in your refrigerator or your freezer, once it’s in a mug, it’s a bit hard to get out without eating it and storing it in the mug just doesn’t work as well as with a regular pancake. Additionally, this portion is small enough that you likely won’t need to store leftovers!

Serving suggestions

If you’re going for a big breakfast spread, serve your pancake in a mug alongside choices like Breakfast Potatoes, Sunny-Side-Up Eggs, and Bacon In Cast Iron, or Beef Bacon if you prefer an alternative to traditional bacon! As to your pancake itself, my favorite topping is Sweetened Whipped Cream. You can also do variations like Chocolate Whipped Cream or Strawberry Whipped Cream and top it all off with fresh fruits.

Ingredients
  

  • 1/4 cup all-purpose flour
  • 1 tablespoon brown sugar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/4 cup whole milk
  • 3 1/2 teaspoons vegetable oil
  • 3/4 teaspoon vanilla extract
  • Butter and maple syrup for serving (optional)
  • Fresh fruit for serving (optional)

Instructions
 

  • In a large microwave-safe mug, whisk together flour, brown sugar, granulated sugar, baking powder, and a pinch of salt.

  • Add milk, vegetable oil, and vanilla extract to the mug. Stir until the batter is smooth, ensuring there are no dry pockets.

  • Microwave on high for 60 seconds. Check if the pancake is cooked through, if not, microwave for an additional 10-20 seconds.

  • Carefully remove the mug from the microwave. Top with butter and maple syrup or other toppings like fresh fruit.
