Chickpeas, garbanzo beans, Egyptian peas — whatever you call them, they are a delicious and nutritious ingredient that has a million uses (like with tomatoes on flatbread). But, once you learn how to roast chickpeas, I genuinely think you will never look at them the same way again.

Once roasted in olive oil and seasoning, these chickpeas become crispy and easy to eat by the handful. It takes hardly any time or effort at all to elevate your chickpeas into a tasty snack or topping for salads like a chopped salad, and they are super healthy, too.

Variations

I use paprika, salt, and mint, but you don’t have to stick with this method! Try out some other flavors and see what works best for you.

  • Spicy chickpeas: Toss your chickpeas in cayenne pepper, chili powder, paprika, or your favorite spicy seasoning to bring some heat to your snack.
  • Barbecue chickpeas: The best flavor of Corn Nuts! Mix some barbecue seasoning blend with your chickpeas, or if you are feeling adventurous, some barbecue sauce. You might not want to eat them with your hands, though.
  • Parmesan and herb chickpeas: Oregano or basil pair amazingly with grated Parmesan cheese and garlic powder or garlic salt.
  • Honey and cinnamon chickpeas: Make your roasted chickpeas into a sweet treat! Bake them in a layer of honey, then sprinkle over some cinnamon and a touch of sugar.
  • Curry chickpeas: A blend of curry powder, cumin, turmeric, and salt lend some comforting Indian-inspired flavors to your chickpeas.

Serving Suggestions

There are so many ways you can enjoy these crispy chickpeas. Aside from munching them on their own, here are some ideas:

  • Replace the croutons in your salad: These chickpeas are crunchy and provide both texture and flavor to any dish. Replace the croutons in a salad, like my Kansas chopped salad, for a low carb alternative.
  • Use them in a buddha bowl: You’ve seen the Instagram-famous buddha bowls, filled with a range of grains, veggies, and proteins. These chickpeas would add an incredible crispiness to this dish.
  • Top your soup with them: Again, it’s all about the texture. Utilize your roasted chickpeas as a topping in a potato soup, butternut squash soup, or even a beef stew.
  • Add them to your snack board: Charcuterie boards are a popular and easy way to serve guests. Stick these chickpeas next to some prosciutto, salami, olives, crackers, and cheese, plus a glass of wine on the side. You can also sprinkle them over a baked rice dish for a different kind of spread.

FAQs

Can I use other seasonings?

Sure! Feel free to use other seasonings like garlic powder or sumac. They go perfectly with these roasted chickpeas as well. Just use whatever seasonings you love best!

Should I use fresh or canned chickpeas?

You can use either, just as long as they have been cooked. If you are using canned, be sure to rinse them off thoroughly before you roast them.

How do I know when the chickpeas are done?

This can easily be checked by cutting or biting into a chickpea. I wouldn’t recommend roasting them for less than 20 minutes. If they are still not crispy, slightly starchy, or aren’t golden in color, keep cooking at check them at 5 minute intervals.

How to Store Roasted Chickpeas

When stored properly, your roasted chickpeas should last up to 2-3 weeks. Simply let them cool, then place them in a clean and dry airtight container, ensuring it’s sealed tightly. If you have desiccant packets to absorb moisture, you can put one or two in the container as well to preserve the freshness of your chickpeas. Keep them in a cool and dry place like your cupboard or your pantry, out of direct sunlight.
