I like to have this dip on hand when I feel a little bit snacky, because I’m a bit more assured that at least I’m eating something with greens in it. And, it makes crackers feel a little less lonely. How to Make Creamy Spinach Dip – The Steps

Step 1: Preheat the oven to 375° F.

Step 2: Steam the spinach until it is wilted and then squeeze out as much water as you can. Use a paper towel to dab it dry if need be. Then, shred your spinach with a knife or scissors.

Step 3: In a bowl, mix cream cheese, sour cream, baby spinach, garlic, salt, pepper, half the Parmesan cheese, and half the mozzarella cheese together.

Step 4: Pour the mixture into an oven safe dish, then sprinkle the rest of the mozzarella and Parmesan on top. Pop it into the oven and bake for 20 – 25 minutes, or until the cheese is all melted and the top is a little bubbled and browned.

You must squeeze all the water out of the spinach, and use a paper towel to get it dry. Spinach is full of water, so this can take a couple of minutes but do not skip this step.

Can I use frozen spinach?

Of course you can! Just be sure to rid your frozen spinach of any excess moisture and dab it dry with a paper towel.

My cheese isn’t browning on top. What can I do?

If the cheesy top isn’t getting to the level of brownness after you’ve baked it, pop the broiler on at the end to brown the top. Be sure to use a low setting and keep an eye on it so it doesn’t burn.

How to Store Creamy Spinach Dip

Let your dip cool completely before you wrap it in plastic wrap and place it in the refrigerator. It will keep fresh for 4 days. You might need to give it a stir or loosen it with a little more sour cream if it has congealed. You can heat it again in the microwave or in the oven for a few minutes, but be sure you’re only heating what will be eaten because heating and cooling this dish too many times can spoil it.

I wouldn’t recommend freezing any leftovers, but lucky for you, there probably won’t be very many leftovers anyway.
