Whole Wheat Orange Chocolate Chip Muffins – light and fluffy orange and chocolate muffins with a streusel topping made with whole wheat flour.

I don’t know how it is where you live, but we have had a lot of winter weather here in the nation’s capital. A lot of winter weather means a lot of snow days. A lot of snow days means finding things to do to keep us from cracking. And by us, I really mean me. The kids have been really good, but how many days can you get stuck inside before you go nuts? I think 4. (I speak from experience.) You can only watch so many movies, read so many magazines, and break up so many fights over whose turn it is to play Minecraft before you crack.

After checking Facebook like a million times during the Polar Vortex, it seemed like everyone was occupying their time by baking. I like to bake, Ava likes to bake, so we whipped up some Whole Wheat Orange Chocolate Chip Muffins. These muffins are really tasty. Ava was able to do 90% of the work by herself, I just had to supervise. And do the dishes. Shockingly, she was no where to be found when it came time to clean up. Thanks Aves. Thankfully these muffins were worth it.

Whole Wheat Orange Chocolate Chip Muffins recipe

2 cups white whole wheat flour
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 cup mini chocolate chips
2 eggs
1/2 cup sugar
1/2 cup milk
1 Tablespoon orange zest
1/2 cup fresh orange juice
1/4 cup vegetable oil

Streusel:

1/2 cup white whole wheat flour
1/2 cup sugar
1/3 cup cold butter
1/2 cup mini chocolate chips

Line a muffin tin with 12 paper liners. Preheat oven to 400 degrees. Stir together flour, baking powder, salt, and mini chips in a large bowl. Set aside. In another bowl, whisk together eggs, sugar, milk, orange zest, orange juice and oil.

Have your helper do the heavy lifting.

In another bowl make the streusel.

Fork together flour, sugar, and butter until it resembles coarse crumbs. Add in chips.

Pour the liquid into the dry ingredients. Mix until just combined. You do not want to over-mix, or you will end up with a tough muffin.

Scoop 1/4 cup batter into the muffin tins. Add a generous amount of streusel to the top.

Bake for 18 to 20 minutes. Cool in the pan for 5 minutes, then cool completely on a wire rack.

It had been snowing here in Vancouver for the past 4 days. Incredibly unusual for us this time of year. And yep, 4 days is definitely my limit. These muffins look incredible

These turned out delicious. To make them more nutritious, I replaced half the wheat flour with almond meal and used whole wheat pastry flour instead of the white wheat flour. I opted for dried cranberries instead of chocolate chips and did not use the orange zest. A dash of vanilla and cinnamon and no streusel topping completed my twist on this super recipe. Thank you!

Hi, just wanted to say thanks for this brilliant recipe I made it for breakfast this morning and the whole family loved it:-) I couldnt find a white whole wheat flour so I used 1 cup plain white flour (I think this is all purpose) and 1 cup whole wheat flour and it worked a treat.
